Zucchini Bread

Ingredients

  • 1 ½ c all purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 2 large eggs
  • ½ c vegetable oil
  • ¾ c sugar
  • 2 tsp vanilla extract
  • 1 1/2c grated zucchini (about 1 medium zucchini)
  • ½ c walnuts, chopped
  • ½ c raisins

Directions

  1. Preheat the oven with the rack in the center position to 350F.
  2. In a large bowl combine the flour, baking powder, baking soda, salt, and cinnamon. Set aside.
  3. In a separate large bowl whisk together the eggs, vegetable oil, sugar, and vanilla extract until combined.
  4. Add the wet into the dry ingredients until just combined.
  5. Add the zucchini, walnuts, and raisins, and gently fold with a spatula until combined.
  6. Grease a 4 ½ x 8 ½ loaf pan with non-stick spray then add the batter.
  7. Bake for 42-45 minutes, or until an inserted skewer comes out clean.
  8. Allow to cool in the pan for 20 minutes before removing it to a wire rack to cool completely before cutting.
