Shaved Brussel Sprout & Butternut Squash Salad

Ingredients

  • 2c cubed butternut squash (1cm cubes)
  • 2 tbsp + 1/4c extra virgin olive oil
  • 6c Brussels sprouts, shaved
  • 1/4c sweetened dried cranberries
  • 1/4c pumpkin seeds
  • 3 tbsp apple cider vinegar
  • 1/2 tsp salt + more to taste
  • 1/2c goat cheese, crumbled

Directions

  1. Preheat the (toaster) oven to 425F.
  2. In a medium bowl, toss the butternut squash with 2 tbsp of the extra virgin olive oil and salt to taste. Spread evenly on a baking tray and cook for 30 minutes, tossing halfway.  Set aside to cool.
  3. In a large bowl, add the Brussel sprouts, sweetened dried cranberries, pumpkin seeds, 1/4c extra virgin olive oil, apple cider vinegar, and salt, and toss well.
  4. Top the salad with the cooled butternut squash and goat cheese.
