Moscow Mule Snow Cones

Ingredients

  • 1 cup water
  • 1 ½ cups sugar
  • ½ cup fresh lime juice
  • 2 tablespoons peeled, coarsely chopped fresh ginger
  • 1 tablespoon lime zest
  • 1 to 2 tablespoons water
  • 6 shots vodka
  • Fresh mint leaves
  • Lime wedges

Directions

  1. In a large saucepan over medium-high heat, bring water to a boil. Add sugar and stir until sugar is dissolved.
  2. Add lime juice and ginger. Simmer 1 minute. Cool.
  3. Using a funnel, pour flavored syrup into squeeze bottles. Refrigerate until cold.
  4. Place ice cubes in blender jar. Add lime zest. Cover and process on ice crush or pulse until ice is completely crushed. (Or you can also use an Ice Shaver.)  Transfer ice to a large bowl. Sprinkle water over ice and mix thoroughly. Use an ice cream scoop to shape ice into balls and place in cups for serving.
  5. Pour one shot vodka over each ice ball. Strain syrup if necessary. Drizzle ice with flavored syrup. Garnish with mint leaves and a lime wedge.
  6. Store remaining syrup in the freezer for next use.
