Maha's Hummus

Ingredients

  • 2 cups cooked or canned chickpeas

  • 1/4 cup tahini

  • 1/2 cup fresh lemon juice

  • 2 garlic cloves (minced)

  • 2 tsp ground cumin

  • 1/2 cup Ice water or ice cubes

  • Salt to taste

  • Olive oil for serving

Directions

  1. In a food processor, combine all ingredients and process for about 1 minute, scrape the sides and process again to your desired consistency making sure ingredients are well blended
  2. If the hummus is still too thick, you need more liquid- slowly add more ice cold water and keep processing till you get a creamier texture.
  3. Taste and adjust as needed, you can add more garlic or cumin to taste.
  4. Plate your hummus and garnish with a handful of whole chickpeas, a drizzle of olive and a sprinkle of cumin.
  5. Store homemade hummus in an airtight container and refrigerate for up to one week.

Cook’s Tips:

  • For a creamier texture use cooked chickpeas and remove the skin.
  • Ice Cold water gives you a creamier texture.
