Cinnamon Streusel Muffins

Ingredients

Muffins:

  • 2 ¼ cups all-purpose flour
  • 3/4 cup granulated sugar
  • 2 teaspoons baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon salt
  • ¾ cup milk
  • ¼ cup butter, melted
  • 1 teaspoon vanilla extract
  • 1 large egg
  •  

Streusel Topping:

  • ½ cup all-purpose flour
  • ¼ cup packed brown sugar
  • ½ teaspoon ground cinnamon
  • 3 tablespoons butter

Directions

  1. To make muffins: Heat oven to 375°F. Grease or line a 12-cup muffin pan with paper baking cups. Set aside.
  2. In a large bowl, stir together flour, granulated sugar, baking powder, cinnamon and salt.
  3. In a small bowl, using an electric mixer or whisk, beat milk, butter, vanilla extract and egg until blended. Gradually add milk mixture to flour mixture. Stir until just blended.
  4. Spoon into prepared muffin pan.
  5. To make streusel topping: In a medium bowl, using 2 forks, blend ½ cup all-purpose flour, ¼ cup packed brown sugar, ½ teaspoon ground cinnamon and 3 tablespoons butter until crumbs form. Sprinkle over muffins.
  6. Bake 20 to 23 minutes or until toothpick inserted in center comes out clean.
