Images and Recipe by Sandra Valvassori

Ingredients

Salmon

  • 1 1/4 lbs. center-cut salmon, skin removed
  • 2 teaspoons gochujang (Korean red pepper paste)
  • 1 tablespoon brown sugar (or honey)
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon coarse kosher salt
  • 1 teaspoon cornstarch
  • 2 tablespoons olive oil

Miso-Gochujang Sauce

  • 1/4 cup white miso
  • 3 tablespoons Gochujang paste
  • 3 tablespoons toasted sesame oil
  • 4 green onions, white and light green parts only, roughly chopped
  • 1 clove garlic, roughly chopped
  • 1 (1-inch) piece ginger, roughly chopped
  • 2 tablespoons honey (or more to taste)
  • 1 teaspoon soy sauce (optional)
  • 1/4 cup water

Directions

  1. Pat salmon with paper towels to dry the surface and cut into 1-inch cubes. In a medium bowl, combine gochujang, brown sugar, smoked paprika, garlic powder, salt, cornstarch and olive oil; whisk until combined. Add salmon and gently toss to coat.
  2. Make the miso-gochujang sauce. To a Hamilton Beach mini food chopper, add miso, gochujang paste, sesame oil, green onions, garlic, ginger, honey, soy sauce (if using) and water. Blend until smooth and set aside.
  3. Place salmon in the air fryer basket in a single layer. Air fry at 400ºF for 8-9 minutes. No need to shake halfway through.
  4. Serve salmon bites as a snack or appetizer with miso-gochujang sauce for dipping. Or for a delicious complete meal, serve salmon bites over fluffy white rice, veggies of your choice, and generous drizzles of sauce.

Cook’s Tips:

  • Store any leftover gochujang sauce in the refrigerator in an airtight container for up to 2 weeks. You can also freeze the sauce for later use.
